Peri-peri makhana is a perfect tea-time snack, bursting with flavour. It is low-calorie, very healthy, and an absolute favourite of my younger daughters. It takes only 10 minutes to prepare, something I came across when I was trying to lose weight and find snacks for that. The peri-peri seasoning brings out the salty, tangy and spicy flavours in the makhana.
There is a popular conception that lotus seeds and makhana are the same, but makhana is not from the Indian lotus plant. They originate from different aquatic plants, although they are used interchangeably. Makhana is actually the popped, expanded kernel of the Gorgon nut.
How to prepare peri-peri makhana in 3 steps?
- Dry roast fox nuts or makhana. Transfer into a bowl.
- Mix the spices in another bowl.
- Add ghee over roasted seeds, stir to coat and sprinkle spice over and toss to coat.

In a small bowl, mix all the ingredients except ghee and lotus seed.

Heat a wide skillet on medium to high heat. Toast lotus seeds for 4 to 5 minutes, stirring continuously until crispy. Make sure not to burn the nuts.

Transfer to a big bowl. Add 2 tbsp of ghee and stir to coat each nut with ghee.

Sprinkle 1 tbsp of spice mix, toss. Then sprinkle rest and toss to coat each nut in the spice mix.

Let it come to room temperature. Store in an airtight container.
