Bottlegourd and moong dal curry is a great, experimental alternative to the standard dal tadka. Also, at my home, everyone likes gravy with their meals. Since dal is an absolute favourite, I have gone on to try multiple dal based recipes. In Kerala, we prepare almost every vegetable with dal. We pair it with raw mango, tomatoes, drumsticks, and so many others. However, bottlegourd is a newer addition to this mix. Normally, the vegetable and dal is cooked and ground coconut paste is added. Here, you will find it a little different as coriander seeds are added, making it highly flavourful.
How to prepare bottlegourd and moong dal curry in 3 steps?
- Cook lentils and bottlegourd with salt and turmeric.
- Next, roast spices and grind with coconut to a smooth paste.
- Then, add ground paste to cooked lentils and temper mustard seeds, curry leaves, dried chillies and mung.
What to serve with?
Serve with steamed rice or roti for a hearty vegetarian meal.
