French Beans and Potato Stir Fry

pinit

French beans and potato stir fry was a spontaneous recipe that I developed. There are days when you go into the kitchen with a clear vision, where I am very prepared. But this was one where I had no concrete plan. I knew I had to make a vegetarian dish with beans. The classic option is the bean thoran, but I wanted to do something different. I changed the way in which it is cut, where instead of the tiny pieces, I cut them into 3 inch long pieces. Also, potato being a favourite vegetable in my house, I included it, using baby potatoes which have a great texture. I used a cast iron, and it was ready in 10 minutes.

Even though I made a non-veg dish as well that day, my husband and daughter were fighting over this vegetarian option instead.

How to prepare in 3 steps?

  1. Peel, wash, slice and fry potatoes with salt and turmeric.
  2. Add onions and french beans. Next, stir fry until the beans is cooked and onions are browned.
  3. Now add crushed garlic and sprinkle sambar powder. Stir fry for a few minutes and serve warm.

What to serve with?

This stir fry dish works great with rice, jeera rice and roti for a hearty meal.

Note

Potatoes - You can use baby potatoes or red firm potatoes for this recipe. If you are using big, red, potatoes, peel and cut into 1 inch cubes. I prefer to soak potatoes in water for 30 minutes after cutting to remove excess starch. In all my recipes where I use potatoes, I peel, slice and soak in water for 30 minutes. Drain well and use.

French beans - Tender french beans gives the best flavour for this dish. Cooks easily when you stir fry on medium flame. If your beans are not tender, then after stir frying for 5 minutes, cover and lower the flame and let it soften.

Sambar powder - You can use homemade sambar powder or any good brand available in the market.

Garlic - Like any other recipes, I prefer Indian garlic in this recipe too.
