French Beans and Potato Stir Fry

Ingredients
  • 100 grams French beans
  • 100 grams Baby potato
  • 2 Onions (medium sliced)
  • 1 tablespoon Garlic (crushed)
  • Salt (to taste)
  • 1/4 teaspoons Turmeric
  • 1 tablespoon Sambar powder
  • 2 sprig Curry leaves
  • 2 tablespoons Coconut oil
Instructions
  1. Wash and drain French beans. Cut into 3 inch long pieces. Peel and wash baby potatoes. Cut in half. 

  2. In an iron skillet or heavy bottom pan, add oil. Fry potatoes with salt and turmeric. Fry until potatoes are browned. Then cover the pan. Turn off the flame and let it sit for 10 minutes. 

  3. Open, turn on the flame, add sliced onions. Continue to cook until onions start to change colour. Add beans, salt and cook until beans is cooked. 

  4. Add garlic, stir on high flame until raw smell is gone. Sprinkle sambar powder and curry leaves. 

  5. Stir on medium flame for 2 to 3 minutes. Rest for 5 minutes and serve warm. 

Note

Potatoes - You can use baby potatoes or red firm potatoes for this recipe. If you are using big, red, potatoes, peel and cut into 1 inch cubes. I prefer to soak potatoes in water for 30 minutes after cutting to remove excess starch. In all my recipes where I use potatoes, I peel, slice and soak in water for 30 minutes. Drain well and use. 

French beans - Tender french beans gives the best flavour for this dish. Cooks easily when you stir fry on medium flame. If your beans are not tender, then after stir frying for 5 minutes, cover and lower the flame and let it soften. 

Sambar powder - You can use homemade sambar powder or any good brand available in the market. 

Garlic - Like any other recipes, I prefer Indian garlic in this recipe too.
