Chicken Doner Salad – Healthy and Versatile

Ingredients
    Chicken Doner
  • 400 grams Chicken breast minced
  • 1 tablespoon Onion powder
  • 1 tablespoon Paprika
  • 2 teaspoons Garlic powder
  • 1/2 teaspoons Cumin powder
  • 1/2 teaspoons Pepper powder
  • 1/8 teaspoons Cinnamon powder
  • 3/4 teaspoons Salt
  • 2 tablespoons Olive oil
  • Veg Mix
  • 2 cups Shredded cabbage
  • 2 cups Lettuce (Julienne strips)
  • 1 cup Sweet red pepper (Julienne strips)
  • 1 cup Pickled cucumber (Julienne strips)
  • 1 cup Onions (sliced)
  • Salt (to taste)
  • 1-2 tablespoons Lime juice
  • Salad Dressing
  • 100 grams Greek yogurt
  • 50 grams Mayonnaise
  • 1/2 teaspoons Garlic powder
  • 1 teaspoon Cajun spice
  • 1 teaspoon Smoked paprika
Instructions
  1. Prepare the Doner Mixture - In a large bowl, combine the chicken mince with onion powder, paprika, garlic powder, cumin, pepper, cinnamon, salt, and olive oil.  Mix thoroughly until the spices are evenly distributed. Cover and refrigerate for 30 minutes to allow the flavors to develop.

  2. Shape and Bake

    Cut baking paper into rectangles (approximately 30 cm x 20 cm). Take about 90—-100 grams of the  marinated chicken mixture and place it on one half of the paper. Press it into a thin, even layer, spreading it neatly across the surface. Fold the paper over to cover the meat. Place the prepared sheets on a baking tray and bake in a preheated oven at 190°C for 20 minutes. Remove from the oven and carefully open the baking paper. Transfer the cooked chicken sheets to a wire rack and allow them to cool. Once cooled, cut into strips.

  3. Pan Crisping

    Lightly shallow fry the baked chicken sheets in a pan with a little oil until slightly crisp on the edges. Cut into strips.

  4. Make the Doner Sauce - In a bowl, combine Greek yogurt, mayonnaise, garlic powder, Cajun spice, and smoked paprika. Mix until smooth and creamy. Set aside.

  5. Prepare the Vegetable Mix - In a large bowl, combine the following.

    Shredded cabbage
    Romaine lettuce
    Red pepper
    Pickled cucumbers
    Red onions
    Add a squeeze of lime juice and a pinch of salt. Toss well.

  6. Assemble the Salad - Add the sliced chicken to the vegetable mix. Pour in the prepared doner sauce and toss everything together until well coated.

Storage & Meal Prep Tips - Store chicken, vegetables, and sauce separately for best freshness. Assemble only what you need before serving. Cooked chicken can be refrigerated and pan-fry just before use. The full salad (once mixed) keeps
well for 2—3 days in the refrigerator, though it's best enjoyed fresh. Slice vegetables thinly for that authentic doner-style texture. Don't skip the quick pan-fry—it adds amazing flavor. Adjust spice levels in the sauce to suit your taste
